Sweet Lassi

Sweet Lassi is a refreshing, creamy drink made from yogurt, sugar, and water or milk, often flavored with cardamom or rosewater and served chilled.

  • Yoghurt – 250 ml
  • Sugar – 50 gm
  • Kewda water – 50 ml

Method

Mix all together with whisk and serve chilled in a glass.

Tamatar Dhaniya Shorba

  • Tomato – 250 gm
  • Coriander leaves – 10 gm
  • Salt – 2 gm
  • Whipping cream – 30 ml
  • White pepper – 2 gm
  • Butter – 10 gm
  • Onion – 10 gm
  • Lemon – 50 gm
Tamatar Dhaniya soup

Method

Blend tomato.

Melt butter. Saute onions then add blended tomatoes and coriander leaves and bring to boil. Check for seasoning.

Add cream check for seasoning. Garnished with chopped coriander leaves and lemon wedges.

Badam Thandai Juice

Ingredients

  • Milk – 300 ml
  • Saffron – 2 gm
  • Sugar – 30 gm
  • Almond – 30 gm
Soup

Method

Mix all together and serve chilled.

Topped with Almond slice.

Dal Shorba Juice

Number of Portions 01

Ingredients

  • Toor Dal – 80 gm
  • Coriander leaves – 20 gm
  • Salt – 2 gm
  • Whipping cream – 30 ml
  • White pepper – 2 gm
  • Corn Flour – 20 gm
  • Butter – 20 gm
  • Turmeric Powder – 5 gm
  • Lemon Wedge – 30 gm

Method

Boil toor dal with turmeric powder and blend it.

Melt butter add blended puree of dal, coriander leaves salt, cream and white pepper. Bring to boil. Check for seasoning.

Thicken with Cornflour

Garnish with fresh coriander leaves and serve with lemon wedge.

Number of Portions 01

Ingredients

  • Yoghurt – 150 ml
  • Water – 100 ml
  • Salt – 3 gm
  • Green Chilli – 5 gm
  • Coriander leaves – 5 gm
  • Chat Masala – 2 gm

Method

Chop chilly and coriander.

Mix all together and serve chilled.

For plain chach mix yoghurt, water and salt. Serve chilled.

Kumbh Shorba Juice

Ingredients

• Mushroom – 100 gm
• Whipping Cream – 30 ml
• Vegetable Stock – 150 ml
• Salt – 2 gm
• Corn Flour – 20 gm
• White Pepper – 2 gm
• Coriander leaves – 10 gm
• Butter – 20 gm
• Rogan Oil – 2 ml

Method

Prepare vegetable stock. Melt Butter Sautee dices of mushroom, cream, ­coriander leaves and bring to boil.

Thick with corn flour.

Garnish with fresh coriander leaves, whipping cream and Rogan oil.

Salt Lassi

Ingredients

  • Yoghurt – 250 ml
  • Cumin – 5 gm
  • Salt – 2 gm

Method

Mix all together with whisk and serve chilled in a glass.

Sprinkled with Cumin Powder on Top.

Makai Shorba

Number of Portions 01

Ingredients

  • Chicken Breast – 40 gm
  • Sweet Corn – 50 gm
  • Whipping Cream – 30 ml
  • Corn Flour – 20 gm
  • Salt – 2 gm
  • Coriander leaves – 10 gm
  • Chicken stock – 250 ml

Method

Prepare chicken stock.

Add sweet corn, cream, coriander and bring to boil.

Check for seasoning. Add dices of chicken. Thicken with corn flour.

Garnish with fresh coriander leaves and whipping cream.
