South Indian Cranberry Cake Recipe 2024

The cranberries used can be fresh or dried in case your using dried make sure you soak it in the orange juice for 15 minutes and before adding it into the cake batter put in some Maida and get it coated so that the cranberries will not get settled at the bottom of the cake and get burnt.

  • maida – 3/4
  • baking powder – 1 tbsp
  • A pinch of salt
  • butter – 4 tbsp
  • granulated sugar – 1/2 cup
  • sour cream – 1/2 cup
  • sugar – 1 tbsp
  • large egg – 1
  • Zest of half an orange
  • Juice of half an orange
  • A hand full of cranberries

Cranberry Cake Making Method

  1. Preheat the oven to 150 degrees for 10 mins.
  2. Line the trays (use a bundt tin) with butter paper.
  3. Sprinkle some sugar and cranberries at the bottom and set aside. Sift all the dry ingredients (maida, baking powder salt) and keep aside.
  4. Cream the butter and sugar together until till turns pale in colour.
  5. Add eggs one at a time.
  6. Add the orange juice, zest and the sour cream and whisk it well.
  7. Add the dry ingredients little by little and mix well to remove all the lumps.
  8. Then add the remaining cranberries and fold well.

Bake for 40 min or until the skewer comes out clean.

Remove from the oven and cool on a wire rack. You can enjoy this cake with a simple sugar glaze topping.
