Eggless Moist Chocolate Cake
Ingredients
- Maida – 1 1/2 cups
- Powdered sugar – 1 cup
- Cocoa powder (unsweetened) – 1/4 tsp
- Baking soda – 1/2 tsp
- A pinch of salt
- Coffee or even plain water is fine (room temperature) – 1 cup (or less)
- Oil – 1/2 cup
- White distilled vinegar – 1 1/2 tbsp
- Vanilla extract – 1 tbsp

Process
- Preheat the oven at 150 degrees for 10 min. Line the trays with butter paper.
- Combine all the dry ingredients (Maida, sugar, cocoa powder, baking soda, salt)
- Combine the wet ingredients into the dry ingredients.
- Mix everything together properly to remove lumps.
- Bake for 35 min. or until the skewer comes out clean.
Chocolate Mint Cake
Ingredients
- Butter (room temperature) – 1/2 cup
- Sugar – 1 1/2 cup
- 2 eggs
- Vanilla essence – 1 tbsp
- Maida – 1 1/2 cup
- Cocoa powder – 1/2 cup
- A pinch of salt
- Baking soda – 1/2 tsp
- Baking powder – 1/2 tsp
- Strong coffee (at room temperature) – 1/2 cup
- Milk – 1/2 cup
For the frosting:
- Butter (at room temperature) – 1 cup
- Icing sugar – 8 cups
- Peppermint extract – 1/2 tsp
- Milk – 1/2 cup
- Generous amount of chocolate chips
- Food colour (Green) – 1 tsp

Process
- Preheat the oven at 150 degree for 10 minutes. Line the trays with butter paper.
- Sift all the dry ingredients together (maida, cocoa powder, salt, baking powder, baking soda, salt) and set aside.
- In a small cup, mix the coffe and milk and set aside.
- In a large bowl, beat the butter and sugar for about 5 minutes until pale.
- Now add in the eggs one at a time. Add vanilla esssence. Beat well.
- Now alternatively add in the dry ingredients and milk coffee mixture. (dry-wet-dry-wet-dry)
- Mix well to remove all the lumps.
- Pour into two tins and bake for 30 minutes or until the skewer comes out clean.
- Cool on a Wire Rack
Meanwhile prepare the frosting:
- Beat butter and sugar well until combined.
- Add milk to get the required consistency.
- Finally add the peppermint extract and green food colouring.
- Fold in the chocolate chips.
- for the chocolate ganache follow the recipe given in the frostings
- And along with that add 1/4 tsp of peppermint extract
- to enjoy the minty taste on the cake.
