Making Process

Mix the first three ingredients and knead till the dough is really soft. Add oil to this and knead again. Cover the dough with wet cloth for twenty minutes.

  • Jackfruit pulp – 500 gm
  • Milk powder – 25 gm
  • Ghee – 25 gm
  • Butter powder – 10 gm
  • Cardamom powder – 1 tsp
  • Sugar – 250 gm
  • Fried Rava – Required to roll
  • Raisins – To garnish

Making Process

To make jackfruit pulp, grind the fruit in mixer. Boil the pulp in a bowl. When it is kind of dried, add sugar, milk powder, butter powder and mix well with roasted rava, cardamom powder and ghee. Roll the mixture. Add raisins to garnish.

Ingradients

  • Tender jackfruit (boiled and mashed) – 1½ cup
  • Green chilly (chopped in small ring)- 2 nos.
  • Rice powder – 2 tbsps
  • Coriander leaves – 1 tbsp
  • Ginger (nicely chopped) – 1 piece
  • Curry leaves – 1 stem
  • Maida – ¼ cup
  • Oil – For frying
  • Salt – To taste

Making Process

Mix rice powder and maida with water. Knead mashed tender jackfruit and the rest of the ingredients together. Take small rolls and flatten it with fingers. Dip the rolls in rice-powder and maida mixture. Keep it aside for five minutes. Roast it in oil till it turns golden brown. Serve it with tomato sauce.


Jackfruit Sip-Up

Ingradients

  • Jackfruit pulp (Kuzhachakka) – 1 ltr
  • Sugar – 700 gm
  • Water – 1.75 Ltr.
  • Gelatine – 5 gm
  • Citric acid – 5 gm
  • Pineapple essence – 1 tsp

Making Process

To boiling water add citric acid and sugar. Add jackfruit pulp to this and bring to boil. Remove from heat and let it cool. Dissolve gelatine in water and add if to the pulp. Add essence. Fill this in sip-up cover. Refrigerate it and use.


Jackfruit Squash

Ingradients

  • Jackfruit pulp – ¾ ltr.
  • Sugar – 1½ kg
  • Pineapple essence – ¼ tsp
  • Pineapple juice – ¼ ltr.
  • Citric acid – 10 gm

Making Process

To boiled water add citric acid and sugar. Add jackfruit pulp and pineapple juice to this syrup and boil it for ten minutes. To increase the shelf life add 2 gm potasium meta bisulphate.


Jackfruit Shake

Ingradients

  • Jackfruit bulbs – 20 pods
  • Milk – ¾ ltr (chilled)
  • Peanut – 4 tsps
  • Sugar – 3 tbsps
  • Milk maid – ½ cup
  • Cashew nuts – 10 nos
  • Raisins – 20 nos.
  • Cardamom powder – ½ tsp
  • Almond – 8 nos.

Making Process

Add all the ingredients in a mixer. Blend it well to the consistency of shake.
