1. Steamed Jackfruit Cones
Ingredients
- Jaggery – 100 gm
- Jackfruit (cooked in jaggery syrup) – 250 gm.
- Coconut – 1 (grated)
- Semolina – 1 cup (roasted)
- Wheat Powder – 1 cup
- Rice Powder – 1 cup
- Cardamom Powder – 1 teaspoon
- Dried Ginger Powder – 1 teaspoon
- Cumin Seeds Powder – 1 teaspoon
- Salt – To taste
Cooking Method
Mix all the ingredients from 1 to 10 into a dough. Make lemon sized balls of the dough. Make cones using bay leaves or plantation leaves, fill it with these balls seal the cones and cook it for ½ an hour by placing on the tray of the steamer.
2. Jackfruit Halwa
Ingredients
- Jackfruit bulbs (not over ripe) – 1 kg
- Milk – ½ Lt.
- Jaggery – 800 gm
- Powdered wheat – 100 gm
- Caradamom powder – 5 nos.
- Ghee – 100 gm
- Dried ginger powder – 1 tablespoon
Cooking Method
Steam the jackfruit bulbs and puree it using a mixer. Stir in the wheat powder in milk, add it to the jackfruit pulp. Pour this mixture into a heavy bottomed bell metal vessel. Stir continuously. Once the mixture thickness, add the jaggery syrup. Once it becomes a thick fudgy mass and pulls away from the sides of the vessel add dried ginger powder, cardamom powder and stir well.
Remove from the heat. Pour it into a greased dish, smoothing the surface with a spoon. Garnish with cashew nuts.
3. Fried Jackfruit Balls with Sweet Filling
Ingredients
- Jackfruit bulbs (varikka) – 500 gm
- Raisin – 25 gm
- Jaggery – 250 gm
- Cashew nuts – 25 gm
- Rice powder – 100 gm
- Coconut (thinly sliced) – 25 gm
- Ghee – 2 tbsps
- Powdered cardamom – 1 tbsps
- Chickpea flour – 100 gm
- Turmeric powder – A pinch
- All purpose flour – 100 gm
- Salt – A pinch
- Oil – As required
Cooking Method
Cut jackfruit bulbs into small pieces. Make jaggery syrup by heating jaggery with water. Saute cashew, raisins and coconut pieces in ghee. Add jackfruit pieces to the remaining ghee and saute. Once it is sauted add jaggery syrup cardamom powder and saute. Add the fried cashew, raisins coconut to this and remove from the heat. Make a paste of chickpea flour and rice powder with water. It should be of a thick consistency. Make jackfruit mixture into lemon sized balls, dip in the latter and deep fry in oil.
4. Spicy Jackfruit Fritters
Ingredients
- Rice powder – ½ cup
- Steamed jackfruit powder – 1 cup
- Chickpea flour – 1 cup
- Asafoetida – ½ tsp
- Salt – To taste
- Chilli powder – 1 tbsps
Cooking Method
Mix all powders adding salt and water. Fill this dough in a noodle maker. Press it and pour the dough into hot oil. Deep fry.
Grind raw jackfruit to a paste. Add chickpea flour powdered rice, chillipowder, salt, asafoetida, sesame seeds to this dough. Fill it in a ricer and deep fry in hot oil.
5. Raw Jackfruit Halwa
Ingredients
- Milk – ½ ltr.
- Raw jackfruit – 250 gm
- Powdered rice – 2 tbsps
- Cardamom powder – ½ tsp
- Cashew nut – 25 gm
- Sugar – 250 gm
Cooking Method
Mix the powdered rice in milk to form a paste. Steam the jackfruit puree it in a mixer by adding milk. Heat a heavy bottomed skillet and pour the mixture in stirring continuously. Add sugar. Once it thickens add ghee. Once the mixture starts to leave the sides of the vessel add cardamom powder, ghee roasted cashew nuts, spread in a dish and slice it after it has cooled down.
