1. Beef Curry (Kerala Special)

Ingredients

  • Ginger – 1 tsp finely chopped
  • Beef – ½ kg cut into cubes
  • Green chillies – 2 nos cut ­vertically
  • Curry leaves – 3-4 sprigs
  • Onion – 2 medium sliced
  • Water – 1 cup as required
  • Salt – to taste

To Grind Together:

  • Ginger Chopped – 1tbsp
  • Fennel seeds – ½ tsp
  • Kashmiri Chilli Powder – 1tbsp
  • Cinnamon – 1” piece
  • Cardamom – 2 nos
  • Turmeric Powder – ¼ tsp
  • Coriander Powder – 1tbsp
  • Whole black pepper – ½ tsp
  • Garlic Chopped – 1tbsp
  • Cloves – 2 nos
  • Star anise – 1 small

How to Cook

  1. Combine all the ingredients listed under “to grind together” in a blender. Grind it to a paste.
  2. Heat oil in a pan/pressure cooker. Add sliced onion, ginger, green chillies and curry leaves. Sauté until onion turns ­translucent.
  3. Now add the ground masala and fry until oil starts to separate.
  4. Add beef and mix well. Add water and salt to taste, cover and cook until beef is done. Uncover and cook for few minutes or until gravy turns thick.

2. Spicy Beef Curry

It is a famous curry using a traditional masala powder that gives a nice aroma to the curry.

Ingredients

  • Beef – 500 gm (Chopped into bite size pieces)
  • Chilli Powder – 2 tsp
  • Turmeric Powder – 1tsp
  • Coriander Powder – 1 tbsp.
  • Pepper Powder – 1 tsp
  • Garam Masala Powder – 1.5 tsp
  • Lemon Juice – 1 tbsp.
  • Cumin Powder – 1 tsp
  • Ginger Garlic Paste – 1 tbsp.
  • Salt – to taste

For Curry:

  • Oil – 2 tbsp. + 2 tbsp.
  • Onion – 2 Large sliced thinly
  • Ginger Garlic Paste – 1 tbsp.
  • Tomatoes – 2 large chopped finely
  • Coriander Powder – 1 tbsp.
  • Chilli Powder – 2 tbsp.
  • Pepper Powder – 1 tsp
  • Turmeric Powder – 1 tsp
  • Cumin Powder – 1 tsp
  • Garam Masala Powder – 1.5 tsp
  • Ginger Garlic Paste – 1 tbsp.
  • Salt to taste
  • Thick Coconut milk – 1 cup
  • Water as needed
  • Coriander leaves as needed finely chopped
  • Curry Leaves – a handful

Whole Spices:

  • Fennel Seeds – 1 tsp
  • Cumin Seeds – 1 tsp
  • Cinnamon – 2 cm piece
  • Cardamom – 3
  • Cloves – 3
  • Bay leaf – 1
  • Black stone flower – 1 pc
  • Star Anise – 1

How to Cook

  1. Take all marinating ingredients in a bowl and mix well. Leave to marinate for 15 minutes to 1 hour.
  2. Heat 2 tbsp. oil in a pressure cooker.
  3. Add in beef and stir fry for 5 minutes. Add in 1.5 cup of water and mix well.
  4. Pressure cook for 10 whistle, simmer for 15 to 20 minutes.
  5. Turn off the heat and let the steam go all by itself.
  6. Open the cooker and checked for doneness.
  7. Now heat oil in a Kadai. Add in all spices and sizzle for a minute.
  8. Add in onions, curry leaves and salt. Cook till onion gets golden.
  9. Add tomatoes and cook it till gets mushy.
  10. Add in all spice powder and mix well.
  11. Add in the cooked beef along with liquid and mix well.
  12. Bring it to a boil and simmer for few more minutes.
  13. Add coconut milk and simmer for 5 more minutes.
  14. Add coriander leaves and mix well.

3. Beef Vindaloo

Ingredients

  • Vegetable oil – 5 tbsp.
  • Cinnamon – ¼ inch stick
  • Beef – 500 gm
  • Curry Leaves – 2 sprigs
  • Turmeric Powder – ½ tsp
  • For the Masala Paste: Onion – 2 nos. (Chopped)
  • Cumin – 1 tsp
  • Kashmiri red chillies – 8 nos.
  • Ginger Paste – 1 tbsp.
  • Garlic Paste – ½ tbsp.
  • Cloves – 3 nos.
  • Black Pepper – 5 nos.
  • Tomatoes – 2 nos. (Chopped)
  • Water – 500 ml
  • Vinegar – 250 ml
  • Salt – to taste
  • Sugar – a pinch

How to Cook

  1. Cut the beef into small pieces and clean with water.
  2. Grind Onion, Kashmiri red chillies, tomato, ginger paste, cumin, cloves, ­cinnamon, black pepper, turmeric powder, vinegar, sugar and salt to a smooth masala paste with a mixer grinder.
  3. Do not add water; transfer the thick paste into a bowl. Rinse the masala grinder with vinegar and reserve to the prepared gravy.
  4. Rub the pieces with this masala paste and marinate the beef into 4 hours.
  5. Heat oil in a pressure cooker then add the curry leaves and fry for few seconds.
  6. Then add the marinated beef pieces and sauté in a medium heat until the oil starts separating from the masala. Then add the reserved masala water and stir well.
  7. Pour the water and cook in a slow fire until the beef is well cooked. Tender and soft or pressure cook. Switch off the flame let the pressure cooker cools down.
  8. Checked if the meat is tender or soft. Taste and adjust seasoning. Add more vinegar, sugar and salt if necessary.
  9. Depending on the consistency of the gravy required thicken or diluted if necessary, with vinegar or water.
  10. Tasty Beef Vindaloo is ready. Serve with hot boiled rice, bread, Chapatti etc.

4. Beef Coconut Fry

Is a mildly spiced dish and its intensely flavoured dry style of curry.

Ingredients

  • Beef – ½ kg
  • Meat Masala – 1 tbsp.
  • Coriander Powder – 2 tbsp.
  • Onion – 1 whole (Chopped)
  • Garam Masala – 1 tsp
  • Green Chillies – 4 pcs (Chopped)
  • Ginger Garlic Paste – 1 tbsp.
  • Turmeric Powder – 1 tsp
  • Dry Red Chillies – 3 pcs
  • Coconut Oil – As required
  • Coconut slices – ½ cup
  • Salt – to taste
  • Curry leaves – Few

How to Cook

  1. For preparing beef coconut fry, first dry roast the coriander powder and chilly powder in a low fire. The powder should start to turn in dark in colour.
  2. Marinate the beef with ginger garlic paste, turmeric, roasted powder, meat masala, garam masala, 1 tbsp. oil, curry leaves and required salt.
  3. Keep this refrigerated for 1 hour. Pressure cook the beef with 1 glass of water and make it dry mix. In another Kadai, Heat 2 tbsp. oil. Fry onion, chillies, green chillies, curry leaves and coconut slices.
  4. Sprinkle with a pinch of salt. When it turns dark cooler, add the cooked beef and fry it in low fire.
  5. Tasty and spicy beef coconut fry is ready.
